The market is full of this exotic fruit witch i love very much especially in my plain fresh yogurt. yesterday i decided to sacrifice some of them for my muffins.the muffins are yammy!and very easy to do. and most importend healty too.I got 20 small muffins. i love them small,2 bits and no more...here is the recipe.
Iused a cupe of 250 ml to measure.
2 large eggs
1/2 cup light brown sugar (or whit sugar)
1/2 cup plain yogurt
100 ml canolla oil,or any cooking oil
3 big passionfruit- the pulp
1 1/2 cup self - raising flour
1/2 cup desiccated coconut(פתיתי קוקוס)
muffin pan or papare cups.
preheat oven to 175 c
* whisk eggs and sugar toghter until frothy.
*Add yoghurt and oil mix well.add pulp,coconut mix well.
* sieve and fold in the flour and mix well.(don't mix to long you will get heavy muffins)
* fill uo any size of muffin tray or cup 3/4.
back for a 15-20 min.depends on the size of the cups.if they are small like mine between 10-15 will be OK.the color should be golden.
store in a refrigerator or freeze them if you don't intend to eat them on the same day.
